10 oz frozen spinach (thawed)1/2 cup Ricotta Cheese1 cup Alfredo SauceLemonNutmeg2 large boneless skinless Chicken BreastProsciuttoSwiss CheeseSeasoned Bread Crumbs
Preheat Oven to 425 degrees. Squeeze the excess liquid form the thawed spinach. Combine with 1/2 cup Ricotta Cheese a 1/4 cup of the alfredo sauce, a squeeze of lemon, pinch of nutmeg, salt, and pepper. Pound chicken breast until their surface area nearly doubles. Place in a baking dish. Season with salt and pepper. Slather the remaining alfredo sauce on the chicken then layer with prosciutto, spinach mixture, then swiss cheese. Top with bread crumbs. Bake for 20 minutes or until chicken is done.
