Ingredients
1/4 cup rice2 bell peppers diced1 onion grated1Tbsp butter3 oz tomato paste4 cups beef broth1/4 greek yogurtsalt and pepper to taste
Directions
add rice and raw veggies to pan with the butter. Saute. Add beef broth and tomoto paste. Simmer for 45 minutes. Whisk in greek yogurt. Salt and pepper to taste. Cook additional 5 min
