Southwest Meatballs (with warm corn-black bean salsa)

Ingredients
1 lbs ground beef2 large egg whites1/4 cup bread crumbs1/4 tsp salt1/4 tsp black pepper2 tsp olive oil1 cup frozen corn1 15oz can black beans2 cups diced tomato1/2 cup chicken broth1 tbsp lime juice1 tsp cumin1 cup fresh spinach
Directions
In a large bowl, combine ground beef, egg whites, bread crumbs, salt, and pepper and mix well. Shape into 16 meatballs (about the size of golf balls)

In a large skillet, heat oil on medium-high. Add meatballs and cook 3-5 minutes, turning frequently until browned on all sided. Add corn, beans, tomatoes, broth, lime juice and cumin and mix well. Reduce heat to medium, partially cover and cook for an additional 3-5 minutes, until meatballs are cooked through. Stir in spinach and serve.
