Italian Macaroni and Cheese with Broccoli

12 oz pasta, cooked2 T. Smart Balance, butter or olive oil1/2 c. minced onion4 cloves garlic, minced1/3 c. flour, whole wheat or unbleached3 c. skim milk2 c. chopped broccoli, lightly steamed1 t. dried oregano1/4 t. dried thyme leaves1/4 t. dried basil2 c. mozzarella, grated1 c. grated or shredded parmesan
Saute onion and garlic in melted butter. Make a roux, adding flour and then gradually adding milk. Add oregano, thyme and basil. Let sauce simmer on low heat about 5-10 minutes.
Mix pasta, cream sauce, broccoli, and half the cheese, and put into a casserole dish. Top with the remaining cheese.
Bake at 350 degrees for about 30 minutes or until the cheese on top browns and the casserole bubbles around the edges.
