Lentil Burger

1/2 Cup RED Lentils1/2 Stick of celery, chopped1 small carrot, chopped2 cups of water1-2 teaspoons of Curry powder2 Tablespoons Plain flour1 egg white, lightly beaten1 1/4 cups of breadcrumbs1 tablespoon polyunsaturated vegetable oilGround pepper to taste
1. Combine lentils, celery, carrot, water and curry powder in a pan, bring to a boil.
2. Simmer covered until mixture thickens, and then cool.
3. Stir in one cup of breadcrumbs and shape mixture into 4 burgers
4. Toss in flour, dip in egg white then cover with remaining breadcrumbs.
5. Heat oil in non-stick pan, add burgers and cook until well browned on both sides, add pepper to taste.
Serving Size: Makes 4 Burgers
