Beet Mango Feta Salad

Ingredients

500 gr boiled beets100 gr cucumber - diced with peel1 medium red onion1 Mango - diced100 gr Feta light - crumbled3 tbsn Cider vinegar
Boil, peel and cool beets. Dice beets- add to salad bowl.
Finely chop onion. (Tip: for tender taste -saute for 3-4 min in a skillet - no oil cooking spray). Chill and add to beets.
Dice the mango and cucumbrt; crumble the feta - Add to the mix.
Add cider vinegar and mix well.
In a pan, warm up oil and saute onion and chard. Add to salad.
Mix it all and chill before serving.
