8 oz linguini1/4 cup tomato puree2 tbsp lite Rice vinegar2 tbsp brown sugar1/4 tsp cayenne pepper1 cup sliced mushrooms6 oz shredded carrots5 heaping tsp crushed garlic1 tbsp ground ginger6 oz broccoli slaw4 tbsp lite soy sauce
cook noodles according to package directions. Meanwhile, mix tomato puree, vinegar, sugar, and pepper together. Strain pasta, return to pot, and mix with tomato mixture.
Cook mushroom for about 2 minutes. Add carrot, ginger, and garlic, cook 1 minute longer. Add broccoli slaw and cook until slaw looks wilted. Mix with noodle mixture.
Add soy sauce to taste.
