Honey Curry Chicken

1 large onion, halved and sliced3 boneless, skinless chicken breasts1/2 tsp salt1/4 tsp pepper2 T butter, melted1/4 c honey1/4 c Dijon mustard1 T curry powder2 lrg red bell peppers, cut into bite-size strips (~1 cup)
Place onion in the bottom of a 3.5 qrt slowcooker. Season chicken with salt and pepper and place on top of the onions. Combine butter, honey, mustard and curry powder. Pour over chicken. Place peppers on top. Cook on low for 5.5 - 6 hours or high for 2.5 - 3 hours. Serve over warm rice.
