Crockpot Pork Carnitas

1 5lb pork roast- we like shoulder 5 packets of taco seasoning 2 large chopped onions 4 cups of water 1 can fire roasted tomatoes
Combine all but the roast in your crock pot and stir well to dissolve powedered taco seasoning.
Add the roast and turn on high.
Every 2 hours I skim and grease off the top of the pot. I let mine cook for about 7 hours.
Once done, I pull all meat off the bone and shred and place back into pot.
We serve it on low carb tortillas and also with some black beans on the side!
