Pineapple Salsa Mahi-Mahi

12 ounces thawed Mahi-Mahi (cooks up 9 ounces)1/2 cup fresh pineapple chunks1/2 cup fresh salsa from the produce department1 tsp cornstarch1 tsp prepared horseradish1/2 tsp honey1/2 tsp brown mustardjuice of 1/4 lemon1/2 tsp black pepper2 cloves of garliccooking spray (like PAM)
*Chop pineapple into small pieces; combine with salsa, cornstarch, horseradish, honey and mustard.
*Coat both sides of fish with cooking spray, sprinkle with pepper and squeeze on lemon juice
*Preheat large saute pan on medium-high. Saute garlic cloves for 2 minutes. Cook fish 3 minutes; turn and add salsa. Cover, reduce to medium, and simmer 5-6 minutes or until flesh is opaque and separates easily with fork.
