8-10 potatoes, boiled1 - 8 oz fat free cream cheese1 C fat free sour cream1 TBS Margarine1/8 tsp paprika2 TBS Chives Chopped (Optional)
Cook and drain potatoes. Beat sour cream and cream cheese until well blended. Add hot potatoes, one at a time until light and fluffy. Add milk (skim/fat free) if too stiff. Season to taste with salt, and garlic salt if desired. Add chives. Spoon into 2 quart casserole and dot with margarine. Sprinkle with paprika. Bake uncovered for 30 minutes. If refrigerated bake at 60 minutes at 350 degrees. Makes 8-10 servings. This can be made ahead and then frozed, Set out until thawed and bake.
