Stuffed Cabbage Soup

Ingredients
1 T olive oil1 lb lean ground beef1 package (1lb) classic coleslaw mix1 large onion chopped1 28 oz can of crushed tomatoes in puree2 14.5 oz cans of low sodium beef broth1 c water1 T lemon juice1/3 brown rice1 t salt1 t pepper
Directions
Heat oil in 6 quart pot over meduim heat, add beef saute unitl browned, drain off any fat. Add diced onion and coleslaw mix, cook uncovered 4 minutes stirring after 2 minutes. Add tomatoes, broth, water, brown sugar and lemon juice.

Bring to boiling. Add rice, reduce heaat to medium-low simmer, covered 45 minutes or until beef and rice are tender. Salt & pepper to taste. Spoon into soup bowls.
