Salmon patties - Asian style

Ingredients
2 frozen salmon filets (about 12 oz total)1/4 red bell pepper chopped1 small carrot chopped2 green onions chopped (white and green parts)1 clove garlic chopped1/4" grated ginger rootSalt and pepper to taste3/4 sleeve of saltine-style crackers1/4 C Fage 0% plain Greek yogurt2 TBSP egg whites1 TBSP siracha (Asian hot sauce)
Directions
Cut all veggies as small as possible. Stir cut veggies and salt and pepper into poached salmon. Mix in cracker crumbs. Add Greek yogurt, siracha, soy sauce,and egg substitute (or egg whites). Use a 1/4 cup measuring cup to portion out patties and brown in a skillet (I use an orgreenic pan so I don't need oil).

Serving Size: 1/4 C ea patty makes 12 servings
