South of the Border Chicken Soup

1 rotisserie chicken3 tsp canola or olive oil 1 large onion, chopped2 medium carrots, chopped2 medium stalks of celery, chopped2 small zucchini squash, chopped2 garlic cloves, minced14.5 oz can of diced tomatoes (with chiles optional)1/2 tsp ancho chili pepper1 tsp chili powder1 1/2 tsp cumin seed, ground4-6 cups of chicken brothcilantro to tasteoptional: pinto beans, black beans and/or corn kernelsoptional toppings: tortilla chips, reduced fat cheddar cheese, finely chopped scallions
