Portuguese Stone Soup

Ingredients
Red PotatoChicken Broth/StockStewed Tomatoes, Italian StyleChick PeasChorizoPaprikaBay LeafThymeOlive Oil
Directions
Sautee Garlic in a small amount of Olive Oil for 5 minutes over a medium heat.
Add onions stir-fry for 3 minutes
Add Thyme, and whole bay leaf, turn heat down to low, allow to sit for 10 minutes.

Pour the broth into the pan, bring to a simmer, cover and cook at a simmer.

Meanwhile boil the potatoes till soft
in skillet, cook Chorizo 3-5, minutes, just until browned,
Drain (keep 1 Tblsp of drippings return to skillet)
Puree 1/2 the chick peas and potato mix together. Add Chorizo, and chick and potato mixture to soup.
cover and simmer 30 - 40 minutes

If you choose, season to taste with salt and pepper.

Add Olive Oil

Serve
