Salmon Burger

Ingredients
1.5 pounds of Fresh Salmon, cut into 1 in. cubes2 scallions chopped1 tsp. lemon zest1/2 cup of Panko bread crumbs2 tbsp. Dijon mustard 1/2 cup mayo1 tbs. fresh lemon juice fresh black pepper
Directions
Put salmon, scallions and lemon zest in food processor or blender. Pulse a few times so its still course.
Put in a large bowl and add the rest of ingredients. Form into about 6 patties. Grill about 4-5 minutes on each side.

Serving Size: Divide into 6 patties
