2 cans (15 oz) Diced Tomatoes, with juice2 cans (15 oz) Pinto or Black Beans (drained, rinsed)2 cans (15 oz) Kidney Beans (drained, rinsed)1 Green Bell Pepper, chopped3/4 cup water or dry red wine1 small onion, chopped3/4 cup celery, chopped3 cloves garlic, minced1 1/2 cups water1 tbsp chili powder1/2 tsp cumin1 tbsp fresh cilantro, chopped or 1 tsp dried1/4 cup tomato paste
Makes 8 servings
Saute the green pepper, onion, celery, and garlic with the wine over medium high heat for 6 to 7 minutes, or until vegetables are tender.
Add the remaining ingredients, stir well.
Bring to boil, reduce heat, cover, and simmer, stirring occasionally for 45 minutes.
