Oven Baked Veggie Fries with Oatmeal Flour

2 cups oatmeal flour1 zucchini1 medium sweet potato1 summer squash3 egg whitesSpices to taste
Cut veggies into strips, dip in egg whites, then flour.
Place on sprayed cookie sheet (I put aluminum foil on my cookie sheet)
Baked 10 minutes, turn over and cook another 10 minutes or until veggies are soft and batter golden brown.
Serving Size: 8 servings, more or less depending on how many fries each person takes
