1 Whole Wheat Tortilla1 Egg1 Egg White1/2 oz. Reduced Fat Feta1 Large leaf Lettuce ( I calculated using Bibb)3 Cherry Tomatoes ( sliced into 3rds )1 TBSP Hummus ( I used Roasted Red Pepper)1 tsp Freshly Ground Black Pepper1/2 tsp Garlic Powder ( fresh garlic can also be used, 1/2 clove, minced )1/2 tsp Onion Powder1 tsp Dill Weed ( Optional )Pinch of Cayenne ( Optional )
Scramble egg and egg white. Add desired seasonings to eggs. When cooked, remove pan from burner and swipe tortilla over burner, both sides, to warm. (Alternatively, a microwave or another hot skillet can be used to warm tortillas, but in my home, this is how we've always done it. Plus I like the little browned spots!) Smear hummus around on tortilla, place tomatoes on tortilla. Add lettuce, feta and eggs. Wrap and go!
