Low cal Mexi Casserole

Ingredients
Turkey, Ground turkey, 93% lean, 16 oz Salsa, 3 cup Yellow Sweet Corn, Frozen, 0.5 cup kernelsTortilla Chips, crushed 2 oz Frozen Mixed Vegetables (mediterranean)- 87g, 2 cup *Kraft 2% Shredded Cheddar Cheese, 1 cup Salt and pepper, as needed
Directions
Preheat oven to 350 F.

Mix corn, salsa, mixed veggies in a saucepan. Season with salt and pepper. Cover and simmer for 10 minutes.

While this is simmering, cook the ground turkey in a fry pan.

When the turkey is cooked, transfer it to a casserole dish and pour the vegetable mixture over top.

Sprinkle the grated cheddar over the veggies, then top with the crushed tortilla chips.

Bake uncovered for 30 minutes.
