slim whole wheat macaroni & cheese

3 1/2 cups cooked, drained, macaroni1 3/4 cups shredded, sharp cheddar cheese1/2 cup finely chopped onion 3 tablespoons chopped parsley1 3/4 cups low fat cottage cheese1/2 cup evaporated skim milk2 teaspoons Dijon style mustardsalt and pepper to taste1 slice of bread, crumbled3 tablespoons grated Parmesan cheese
1. Preheat oven to 350.
2. in large bowl, combine macaroni, Cheddar cheese, onion and parsley.
3. In blender or food processor combine cottage cheese, milk and mustard. Process until smooth.
4. Pour over macaroni mixture and mix thoroughly.
5. Season to taste with salt and pepper.
6. Turn into 2 quart dish coated with non-stick spray.
7. Mix bread crumbs and Parmesan.
8. Sprinkle over casserole.
9. Bake 20 minutes.
