Pumpkin Waffle

2 cup whole wheat pastry flour3 tsp baking powder1 tsp cider spice1 tsp cinnamon2 organic eggs1 cup pumpkin puree (fresh)1/2 cup peach juice1 cup water
Preheat waffle iron. Combine dry ingredients in a small bowl.
In a separate bowl, mix eggs with pumpkin puree. Add to the dry mixture (note that the mixture will be very dry at this stage). Fold in the juice and water until well combined into a moist batter.
Add batter to waffle iron--about 1/4 cup batter per 4-inch waffle--and cook until done.
Serving Size: 10 squares (4X4)
