Kirkland Chicken Stock, Ground beef, Garlic, 6 clove Cauliflower, cooked, 3 cup *1 Tbs. chpped fresh mint, 3 serving *Cotija cheese, 3 oz Zucchini, 3 cup, sliced Cabbage, fresh, 3 cup, chopped Kirkland Organic Diced Tomatoes, *Diamond Crystal - Kosher Salt, bottled water half gallon, 10 baby carrots raw, Egg, fresh, 1 medium Oragnics Adobo Seasoning, Oregano, ground,
In a bowl, hand mix ground beef, egg, cotija cheese, 2 cups of the grated cooked caulifower (grated then microwaved covered for 2 minutes), pinch of salt, mint, oregano, and adobo seasoning. Form meatballs the size of a cookie dough scooper (small), set aside.
In the meantime, get a large pot and fill with water, chicken stock, can of tomatoes,tomato sauce, chipotle cubes, 2-3 tsp salt and carrots, bring to a boil and drop in meatballs quickly. Cook at a medium simmer for 15 minutes, then add zucchini, left over cauliflower, and cabbage. Simmer another 15 minutes until done.
Serving Size: makes 8 bowls (about 2 cups_
