Blue Cheese Dressing

1 tbsp white wine vinegar1/2 cup skim milk2 tbsp finely minced red onions2 tbsp dried parsley (or 1/4 cup fresh)1 fresh garlic clove, finely minced1 cup fat free mayonaise1/2 cup crumbled loose blue cheese1 tbs lemon juice1/4 tsp fresh ground pepper1 pinch cayenne pepper
Combine the vinegar and milk and let it sit for a few minutes while you prepare the rest of the ingredients.
Then add the remaining ingredients except for the blue cheese. Once the mixture is completely lump free and creamy, add the blue cheese and fold in.
Refrigerate the leftovers for up to one week.
Serving Size: Makes 16 2 tbsp servings
