Slow Cooker Stuffed Peppers

Ingredients
4 bell peppers, seeded and ribs removed2 cups cooked brown rice1 cup low sodium chicken or vegetable broth1/2 cup taco cheese1 can no salt added diced tomatoes1/2 tsp cumin1 tsp chili powder1 tsp paprika1/2 tsp cayenne pepper1 can low sodium black beans1 can no salt added sweet corn1 egg whitehot sauce to taste
Directions
Combine cooked rice, spices, beans, corn, hot sauce, cheese and egg in a bowl. Mix thoroughly.

Stuff each pepper, packing tightly. You may round the filling slightly over the top.

Place each pepper in the crockpot. Top with diced tomatoes.

Pour the cup of broth around the bottom of the peppers.

Cover and cook on low for 6-8 hours.

Serving Size: Makes 4 stuffed peppers
