Authentic Mexican Restaurant Rice

1 Tbsp Olive Oil or Vegetable Oil1/2 cup uncooked long grain white rice1/2 cup uncooked brown rice2 cups warm water2 tsp Caldo de TomateOptional Ingredients:1/2 tsp Onion Powder or 1/4 cup chopped onion1/2 tsp Garlic Powder2 Tbsp Fire Roasted Diced Green Chiles1/4 cup Diced Tomatoes1/4 tsp Chili Powder1/4 tsp Black Pepper
In a bowl whisk together warm water, Caldo de Tomate (Knorr brand usually found in the Latin foods of grocery store), and any other dry seasonings. Set aside.
Heat oil in a non-stick saucepant and heat over medium-high heat. Add rice and cook several minutes, stirring constantly until rice is slightly puffed and golden. Stir in other vegetables and cook slightly.
Add water mixture, stir, and cover pan with lid. Reduce heat to low and allow rice to simmer for 25-30min until water has been absorbed. Remove from heat, fluff with fork, cover with lid and allow to rest for 5min.
Serve warm.
