Tangy Vinegar Coleslaw

Ingredients
Vegetables:1 large head of cabbage1 large bell pepper1 large onion (red and/or white)3 medium carrots1/4 cup fresh cilantroDressing:1 cup cider vinegar1/2 cup vegetable oil1/2 cup sugar1 tsp salt1 tsp black pepper2 tsp dry mustard2 tsp celery seed1 oz lime juicedash of cayenne pepper
Directions
Finely chop and grate all vegetables. Combine in large bowl. In a saucepan, combine dressing ingredients and bring to a boil. Pour over vegetables and mix. Cover and chill for at least one hour, preferably overnight.
