Italian Sausages with veggies

Ingredients
Directions
One package of Pork sausages2 green bell peppers2 medium onions2 medium red peppers16 ounce container of button mushrooms2 zucchini's2 12 ounce can's of V8 Cocktail juice
Add cooking spray to the bottom of a large skillet.
Brown sausages over medium high heat in a skillet and remove excess grease.
In a large saucepan over medium heat add chopped up onions, peppers, zucchini and mushrooms.
Add 2 cans of V8 Cocktail juice.
Mix together and add sausages when browned. (I like to wash off the sausages once they are browned to get excess grease off them).
Bring to a boil and then simmer for 1 and 1/2 hours stirring occassionally. I will add some oregano and parsley and a little pepper to taste.
You can use Turkey sausages instead of pork if you have them.
Note: You can add or eliminate any veggies you would like.
Serve over pasta or rice.
