Mix together the following:1 Box Betty Crocker Gluten Free (Yellow) Cake Mix 2 cup Quaker Oats - Quick 1 Minute Oats3 medium Bananas, fresh or frozen1 tbsp Cinnamon, ground, (or to taste)0.33 tsp Nutmeg, ground, (or to taste)1 tsp imitation vanilla flavoring1 large Egg, freshI use a wooden spoon and do not over mix.Divide the above mixture evenly between 12 muffin cups.I find recipes with Oats tend to stick so thoroughly spray your muffin pan and if you use paper liners I suggest spraying them as well.
Cook at 350F for 20-25 minutes. Use a toothpick to test for done-ness.
Remove from muffin tins and place on cooling rack (or else the bottoms may burn)
