Stuffed Acorn Squash

2 acorn squashes1 cup of cooked brown riceSaute in skillet until almost cooked through:1 lb ground meat1 medium onion4 celery stalks with leaves, chopped3 cloves garlic, minced1 T fresh thyme (1 tsp dried)2 T fresh sage, minced (2 tsp dried)1tsp fennel seedsSalt to taste2 small apple diced4 mushrooms small diced2 cups fresh spinach
Wash off acorn squash. Poke a couple holes in the squash with a knife. Make sure you poke the hole all the way to the cavity with the seeds. Place the squash in the microwave on a plate and cook for 10 minutes. Turn the squash over and cook for another 10 minutes.
Saute in skillet until almost cooked through:
ground meat, chopped green onions, chopped celery, garlic, thyme, sage, fennel seed and salt.
When the meat is almost cooked, add apple, mushrooms, rice and spinach.
Cook until meat is completely cooked.
Serving Size: makes 4 half stuffed squash
