Sausage and Potato Bake

Ingredients
1pkg. Hillshire Farm Turkey Smoked Sausage6cups red new potatoes, cut into 1-inch chunks1 green bell pepper, cut into 1-inch chunks1 red bell pepper, cut into 1-inch chunks1 large onion, sliced3 garlic cloves, minced1/2 cup reduced sodium chicken broth1 tablespoon olive oil1 teaspoon dried rosemary leaves, crushed1 teaspoon dried thyme leaves, crushed1/4 teaspoon ground black pepper
Directions
1. Preheat oven to 400 degrees (f). Cut sausage in 1/4-inch slices; set aside.
2. Place potatoes in medium saucepan, cover with water. Bring to a boil, reduce heat. Simmer 10 minutes or until crisp-tender. Drain potatoes.
3. Combine sausage, potatoes, bell peppers, onion, garlic, cicken broth, olive oil and seasonings in a 12x8-inch baking dish; mix lightly.
4. Bake for 30 minutes or until potatoes are lightly browned and vegetables are tender.

Serving Size: Makes 6 servings (about 1 1/2 cups each)

    This was a good solid recipe that cured my craving for smoked sausage and potatoes. Next time I might add a can of fire roasted tomatoes. It did come out a little dry. Good combination of flavors. Had the leftovers for breakfast with a fried egg on top! - 3/6/14
