Green Tea Chia Pudding

Ingredients
2 ½ cups unsweetened coconut milk beverage (the kind in the box or the refrigerated section)¼ teaspoon vanilla extract¼ teaspoon coconut flavouring (optional)2 teaspoons matcha green tea powder3 tablespoons amber agave nectar½ cup black chia seedsFresh fruit to topRaw cashewsSalt
Directions
1) Warm 1 cup of coconut milk in the microwave for 1 minute on HIGH.

2) Add agave, vanilla, coconut flavouring and matcha green tea powder, and whisk thoroughly until the green tea is mostly dissolved.

3) Pour into a large jar (with a tight-fitting lid), and add the rest of the coconut milk. Add a pinch of salt.

4) Add chia seeds, put the lid on and shake vigorously. Let it sit for 5 minutes, then shake the jar again. Chill overnight in the fridge, shaking whenever you remember, and serve with fresh fruit and cashews in the morning!
