Apple Walnut Muffins

1 cup all-purpose flour3/4 cup whole wheat flour1 1/2 tsp baking powder1 1/2 tsp ground cinnamon3 tbsp canola oil1/3 cup light brown sugar1 egg1 egg white1 can sweet potatoes (15 oz) drained and mashed1/2 cup fat-free milk1 1/2 cups baking apples, peeled cored and chopped1/3 cup walnuts chopped
Preheat oven to 400 degrees.
In a large bowl, combine the flours, baking powder, and cinnamon. In a medium bowl, combine the oil, brown sugar, eggs, sweet potatoes, and milk until well mixed.
Make a well in the center of the flour mixture and add the sweet potato mixture, stirring until just moist. Do not over mix. Fold in the apples and walnuts.
Spoon batter into paper lined or non-stick muffin tins, filling 3/4 full. Bake for 20-25 minutes until the muffins spring back when touched lightly in the center.
Serving Size: makes 18 muffins, 1 muffin per serving
