Ingredients
2 tbsp canola oil1 cup onion chopped4 garlic cloves minced10 cups waterchicken boullion for 8 servings2 cups leftover shredded pork1 cup leftover shredded chicken1 - 29 oz can Mexican style hominy1 teaspoon oregano1/2 cup Rotelavocado - cut into 6 portionscilantrojalapeno
Directions
Saute onion and garlic in heated oil in large dutch oven over medium heat. Add water and bouillon and warm through. Add pork, chicken, and hominy and oregano. Simmer over medium low heat for 30 minutes. Stirring to avoid sticking. Serve with 2 tablespoons rotel, 1/6 avocado and fresh chopped cilantro.
