Broccoli, Potato, & Cheddar Soup

Ingredients
1 large potato w/skin, chopped1 small onion, chopped1 cup carrots, chopped10-16oz frozen broccoli6 tbsp Smart Balance spread2-3 cloves minced garlic4 cups fat free, low sodium chicken broth3 cups skim milk1/3 cup flour12oz reduced fat cheddar cheesepepper to taste
Directions
Saute onion, carrot, potatoes, and garlic in butter spread on medium heat until slightly tender.
Add broth & broccoli. Bring mixture to a boil, over medium-high heat. Reduce heat to medium; cook for 10 minutes. Combine milk & flour, stirring w/ whisk until well blended. Add milk mixture to the pot. Cook 5-10 minutes or until slightly think, stirring constantly. Stir in pepper. Remove from heat; add cheese, stirring until cheese melts. Remove 1/3 of soup, put in blender or food processor and puree. Return to pot and serve.
