Meatloaf:1 lb lean ground beef3/4C onion1/4C tomato, pureed1-2C packed, raw spinach3 small (1"x3") sweet red or yellow peppers1C (approx. 1 small) portabella mushroom cap IC raw sweet potato1 Egg1/2 Lemon, juice only1/2t Sea salt1/2t Garlic powder1.5t Italian Seasoning1/4t Ground Oregano1/4t Crushed Red Pepper (use 1/8t or less for kiddos)1t Hot sauce1.5T Worcestershire SauceGlaze: 1:2 Ratio of Agave to Ketchup - for just enough to glaze, 1T agave & 2T ketchup mixed together.
In a food processor, mince the peppers, onion, and spinach. Separately, do the same to the portabella mushroom cap. Shred sweet potato, then mince in food processor. Combine tall ingredients and mix thoroughly with your hands or with the paddle attachment of a stand mixer. Place in a 9x5 loaf pan and bake at 375 degrees for 1.25 hours, until the internal temperature reaches 16o degrees. During the last 15 minutes, glaze with the ketchup and agave.
