Ingredients
2 3/4 Cups Rolled Oats (Old Fashioned) 1 Cup Unsweetened Coconut Flakes 1 Cup Unsalted Pistachios 1/3 Cup Unsalted Pepitas (Pumpkin Seeds) 1 T Kosher Salt 1/2 C Light Brown Sugar Packed 1/3 C Pure Maple Syrup 1/3 C Extra Virgin Olive Oil 3/4 C Dried Sour Cherries
Directions
Preheat oven 300 Degrees, Line 2 Rimmed Cookie Sheets with Parchment Paper

Toss first 5 ingredients in a bowl and set aside
Warm brown sugar, maple syrup, and olive oil in a
small sauce pan over low heat, stirring until sugar
is dissolved. Pour over aot mixture until evenly
coated.

Spread granola on pans and bake. Stirring often until Dry and lite golden brown for 20-25 minutes.

Remove from oven toss with sour cherries. Let cool.
Store in airtight container 1 week or freeze for 1 month.
