Portabella Mushroom Pizza

Ingredients
1 to 1 1/2 Tbsp Olive Oil1/2 clove garlic, diced small2 portabella mushroom caps1/2 large tomato, sliced4 oz mozzarella cheese, sliced basil, oregano, salt and pepper to taste
Directions
Preheat oven to 450. In a small bowl, combine olive oil and garlic. Brush on all sides of the mushrooms. Place on a baking sheet brushed with oil. Season with salt, pepper, and basil. Cook for 3-5 minutes. Layer with cheese, then tomato, then cheese. Sprinkle with oregano. Bake for 3-5 minutes more until cheese is melted. Enjoy!

    This was absolutely delicious. As someone who is just learning to branch out in cooking I did have one surprise though. The mushrooms made a LOT of liquid and it was a bit messy. It seems really obvious they would have tasted even better without the extra mess. Will grill them next time! - 4/14/11
