Garlic Lime Chicken Kebabs

Ingredients
2 chicken breasts1/2 cup lime juice1 tbsp clear honey1 tsp dried rosemary2 cloves garlic
Directions
Cut the chicken into 1 inch cubes.
Place garlic in garlic press to mince and put in a bowl with honey, rosemary and lime juice.
Add the chicken to the bowl and leave for 2 hours in the fridge (this recipe works fine straight from the bowl if you don't have time to wait!
Skewer the chicken onto skewers and put under the grill for about 10 minutes or until cooked all the way through.
Serve with salad, or warm vegetables and rice on the side.
For more fiber and veggies, why not add pieces of onion, green pepper, tomato, mushroom to the skewers?

    I've made this a few times, letting it marinate from 2 hrs to 2 days. It's totally awesome. Leftover chicken is great in salads or wraps. - 9/14/09
