1 tsp olive oil1 clove garlic2 c thinly sliced zucchini1 medium onion thinly sliced1 15 oz can diced tomatoes1 T caperspecorino romano cheese (optional)
heat oil in large skillet, add garlic, cook for one minute, add zucchini and onion, cook until wilted. add tomatos with liquid and capers, cook until reduced. Sprinkle with pecorino romano cheese. Serve on top of any kind of cooked fish.
