1.5 lb Italian sausage6 cups chicken broth2 (14 1/2 ounce) can diced tomatoes, undrained2 cups dry lentils, rinsed1 large onion, chopped (2 cups)2 large carrots, chopped (2 cups)1 small zucchini, chopped ( 1 cup)1 stalk celery, chopped (1 cup)3 cloves garlic, minced1 teaspoon saltBlack pepper, red pepper flakes, basil, oregano, parsley, thyme to taste10 oz. fresh spinach
Brown sausage; drain off fat.
In a large pot combine all ingredients; bring to a boil. Reduce heat, cover. Simmer for about 1 hour or until lentils are tender. Add water, if necessary, for desired consistency. Add spinach and cook another 10 minutes.
Sprinkle with Romano cheese, serve.
