Curried Chicken (GF)

Ingredients
1/2 C Chopped Onion1 C Potato Chopped1 T EVOO3 T GF All Purpose Flour2 T Curry Powder1/2 tsp Ground Ginger1/2 tsp Salt1 C Low Sodium Chicken Stock1 C Milk1 1/2 C Chopped, cooked chicken breast1 Medium Apple, chopped
Directions
Saute the onion and potato in the butter and oil till softened. Add the flour and spices. Stir in the milk and the chicken stock, bring to a boil until thickened. Add the chicken and apples and cook till heated through.

Serve over rice or noodles.
