Baked Haddock in Foil

4 6oz. Haddock Fillets1/4 cup lemon juice1 Sliced Tomato1 Cup Bell Pepper Slices1/2 Cup Onion Slices1 Cup Fresh Spinach2 Tbsp Minced GarlicPinch of Salt and PepperTin Foil
Preheat oven to 400 degrees F
Lay 4 good sized pieces of tin foil out (large enough to contain the fish when folded).
Place 1/4 cup fresh spinach on each of the pieces of foil.
Place the haddock fillets on top of the spinach and sprinkle with salt, pepper and the lemon juice.
Spread 1/2 tbsp of garlic on each then top with a couple slices each of tomato, pepper and onion.
Fold the foil up into pouches.
Bake for 20 minutes or until cooked through.
Let sit to cool the foil for 5 minutes before unwrapping.
Enjoy!
