White Chocolate-Oatmeal-Cranberry Cookies

1/2 cup butter, softened1/2 cup unsweetened applesauce1/2 cup Splenda Brown Sugar Blend1/4 cup Truvia Baking Blend1 large egg1 Tbs vanilla extract2 cups all-purpose flour1 tsp baking soda1/2 tsp baking powder1/4 tsp salt1/4 tsp salt substitute2 cups sweetened dried cranberries (we tested with Craisins)1 1/2 cups pecan pieces, toasted1 1/4 cups uncooked quick-cooking oats1 cup white chocolate pieces
1. Beat butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Add applesauce, egg and vanilla, beating until blended.
2. Combine flour and next 4 ingredients; gradually add to butter mixture, beating until blended. Stir in cranberries, pecans, white chocolate chips and oats.
3. Drop dough by heaping tablespoonfuls 2" apart onto lightly greased baking sheets (or on plain parchment paper). Flatten dough slightly.
4. Bake at 375° for 9 to 11 minutes or until lightly browned. Cool on baking sheets 2 minutes. Transfer to wire racks to cool completely.
