Gluten Free Chocolate Cookies

Ingredients
1 cup Shortening2 Large Eggs1 cup Rice Flour1 cup Flax Meal1/2 cup Honey1 cup Light Brown Sugar1/2 cup Cocoa1 3.9 ounce box Instant Chocolate Pudding1/2 tsp Salt1 tsp Baking Soda
Directions
Pre heat oven to 350 degrees. In medium mixing bowl mix all ingredients. I put everything in one bowl and mixed well. I used a regular eating spoon to scoop up dough, I'd say about a tbsp each cookie. I kind of rounded them a bit and put on ungreased cookie sheets. Bake between 10 and 12 minutes. At 12 minutes, still soft, closer to 10=more chewy. Let me know how yours turned out!
