Quinoa with Shrimp

Ingredients
- 1/4 cup Quinoa - 8 Large Shrimp- 1 Cup Tomatoes- 1/4 Cup Spinach - 1/4 Cup Red Bell Peppers - 1 TSP Garlic - 1 TBSP Half and Half Fat Free Cream
Directions
- In a small pot boil quinoa
- While quinoa is cooking, cook all other ingredients in a saucepan on low-med heat.
- cook until water from tomatoes is gone and shrimp is cooked.
- Once quinoa is cooked drain, and add to sauce.
- Let cook for about 5 minutes and serve
