Roasted Broccoli Couscous Salad

Ingredients
Broccoli, fresh, 4, 5inch spearsCouscous 1/3 cup dry (makes 1 cup)Olive Oil 4tspAlmonds sliced 1/2 cupLemon Juice 2tsp
Directions
Preheat oven to 425. Cut the broccoli into spears and coat with 2 tsp olive oil, salt and pepper optional. Roast in oven for 20 minutes.
Meanwhile bring 1/2 cup of water to a boil, pinch of salt optional. Stir in 1/3 cup of couscous and cover. Remove from heat and let stand for 5 minutes.
In a small mixing bowl mix 2 tsp olive oil with 2 tsp lemon juice, add to couscous and fluff with a fork.
Remove broccoli from oven and chop into pieces. Add broccoli and sliced almonds to couscous and enjoy
