Beef Chili - Gluten Free Paleo

2 lbs beef stew meat - cut into small chunks(may also sub 1 lb ground beef for 1 lb stew meat)1 T coconut oil1 medium onion - chopped2 cloves garlic1/4-1/2 jalapeño - dices1 medium red bell pepper - diced2 c butternut squash - cubed2 cans diced tomatoes (14.5 oz each)1 c beef broth - Trader Joe's gluten free low fat2 T Penzey's Spices Chili 9000 Blend
In cast iron enamel pot:
- melt coconut oil
- brown meat, then remove from pan
- in same pan, sauté onions, garlic, bell pepper, jalapeño, butternut squash
- add beef back to pot with veggies
- stir in Chili 9000 seasoning
- add broth and tomatoes
- cover and simmer on low temp for 1-2 hours
Serving Size: makes (8) sorta generous 1 cup servings
