Chicken + Brown Rice, Mexi-style

brown rice, chicken breast, zucchini, diced tomatoes and green chiles, garlic, onion
1) Cook brown rice according to package.
2) Chop onion and zucchini into 1/2" pieces. Remove half the breast from a rotisserie chicken; discard skin and chop into bite size pieces,
3) Spray skillet with olive-oil non-stick spray. Saute chopped onion and garlic for 3-4 minutes. Add chopped zucchini and cook until everything is soft.
4) Season to taste with chile powder, cumin and salt.
5) Mix in diced tomatoes and green chiles, chicken and brown rice.
