*Flour, white, 1.5 cup *Bob's Red Mill Whole Ground Flaxseed Meal, 12 Tbsp. (3/4 cup)Oatmeal (plain), 0.75 cup dry Brown Sugar, 1 cup, packed Baking Soda, 2 tsp Baking Powder, 1 tsp Salt, .5 tsp Cinnamon, ground, 2 tsp Carrots, raw, 1.5 cup, grated Apples, fresh, 2 medium (2-3/4" dia), peeled and gratedAlmonds, 1 cup, ground Milk, 3.25%, .75 cup Egg, fresh, 2 large Vanilla Extract, 1 tsp
Mix together flour, Flaxseed meal, oat meal, brown sugar, baking soda, baking powder, salt, and cinnamon in a large bowl. Stir in carrots, apples, and almonds.
Combine milk, beaten eggs, and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not over mix.
Fill muffin cups 3/4 full. Bake at 350 for 15-20 minutes.
